Obviously As an angus breeder I am going to say that angus are well suited for your requirements. However, it is imortant to note that often there are more variations within a breed than between breeds. just make sure you do your homework when buying cattle and try to buy from people with a good reputation and who run an opperation similar to the type you want to run.
Have you given any thought to Speckle Park. They were developed in Saskatchewan and fit all the criteria that you have listed. I know from firsthand experience they cross very well with commercial angus. They are a moderate framed, hardy animal. Not to mention you won't need a draft horse to rope them if you're working from horseback. Let me know if you need any information. I also agree with post that states you'll find alot of variance within a breed. I know of some herds that have been virtually closed to outside influence for over 30 years.
Qhorse whereabouts are you in northern Sask. Have you found some cattle yet-I'd go with black baldy cows pretty trouble free and good to learn the business on.
